Have made some locust honey fans here in Hawaii since I brought a bit from the 08' bloom and they've already requested a shipment when I return. It really has a complex taste which is surprizing for it's light color. - cj

This is fantastic news! Locust nectar (with the bees' help!) produces the most amazing, light delicate, spring honey. I crave it! --Jennie
